Foamed Tofu
- 1 pint silken tofu
- mirin (to taste)
- salt
- Puree tofu in blender
- Heat and flavor with salt, mirin.
- Transfer to cream whipper and place whipper in warm water bath until ready for use.
- Drizzle soy-mirin sauce over foamed tofu
Soy-Mirin sauce
- Mix soy sauce and mirin to taste and garnish with chopped scallions
