Foamed Tofu

  • 1 pint silken tofu
  • mirin (to taste)
  • salt
  1. Puree tofu in blender
  2. Heat and flavor with salt, mirin.
  3. Transfer to cream whipper and place whipper in warm water bath until ready for use.
  4. Drizzle soy-mirin sauce over foamed tofu

Soy-Mirin sauce

  1. Mix soy sauce and mirin to taste and garnish with chopped scallions
