Carnitas Dumplings


 

Very heavily adapated from RecipeZaar.

  • 1 lb pork butt, chopped
Fuego Spice Mix
  • 2 T paprika
  • 1/2 t cayenne
  • 2 t salt
  • 2 t ground black pepper
  • 2 t garlic granules
  • 2 t chili powder
  • 2 t oregano
  1. Mix. Makes about 5 T.
Marinade
  • 2 T Coke
  • orange zest, lime zest
  • 1 T soy sauce
  • 1 T oil
  • 1 T Fuego spice mix
  1. Mix marinade ingredients together. Taste for balance. Mix pork into marinade and let sit, refrigerated, as long as possible.
Aromatics
  • 1 clove garlic, minced
  • 1 Fresno chile (or Jalepeno), minced
  • 1 t cumin seeds
Seasonings
  • soy sauce
  • pineapple juice
  • lime juice
  • Coke
  1. Mix seasonings together until a pleasant balance of sweet, sour, salty, and savory is found.
Thickener
  • 2 t cornstarch
  • 2 t water
  1. Drain marinated pork, reserving marinade. Stir-fry until 90% cooked. Remove and reserve.
  2. Stir-fry aromatics until aromatic. Add pork and reserved marinade. Cook until thoroughly tender. Add seasoning liquids and cook longer.
  3. Thicken with cornstarch and water. Remove from heat and spread on a sheet pan to cool thoroughly.
Dumplings
  • Chinese dumpling wrappers
  1. Put pork mixture in dumpling wrappers, seal, and steam. Serve with salsa verde.
