Very heavily adapated from RecipeZaar.
Fuego Spice Mix
- 2 T paprika
- 1/2 t cayenne
- 2 t salt
- 2 t ground black pepper
- 2 t garlic granules
- 2 t chili powder
- 2 t oregano
- Mix. Makes about 5 T.
Marinade
- 2 T Coke
- orange zest, lime zest
- 1 T soy sauce
- 1 T oil
- 1 T Fuego spice mix
- Mix marinade ingredients together. Taste for balance. Mix pork into marinade and let sit, refrigerated, as long as possible.
Aromatics
- 1 clove garlic, minced
- 1 Fresno chile (or Jalepeno), minced
- 1 t cumin seeds
Seasonings
- soy sauce
- pineapple juice
- lime juice
- Coke
- Mix seasonings together until a pleasant balance of sweet, sour, salty, and savory is found.
Thickener
- Drain marinated pork, reserving marinade. Stir-fry until 90% cooked. Remove and reserve.
- Stir-fry aromatics until aromatic. Add pork and reserved marinade.
Cook until thoroughly tender. Add seasoning liquids and cook longer.
- Thicken with cornstarch and water. Remove from heat and spread on a sheet pan to cool thoroughly.
Dumplings
- Chinese dumpling wrappers
- Put pork mixture in dumpling wrappers, seal, and steam. Serve with salsa verde.
